Burrata is a creamy cheese, similar to mozzarella, originally produced in Italy. Here we have used a local cheese producer, Gioia, to create a simple tapa made in minutes. To match the lemon and honey suckle notes of the Geode Chardonnay, we top our cheese bruschettas with an olive oil infused with citrus made in Santa Barbara and a touch of fresh honey. This dish, like the Geode Chardonnay, is great for any occasion and is always a crowd pleaser.
Preheat your grill or grill pan to medium heat. Slice the bread into 12 1/4 inch thick slices and toast on the grill until golden brown on both sides to make crostini. While the bread is still hot from the grill, rub one side with the garlic cloves and set aside. Top each crostini with a scoop of the burrata cheese.
Place two crostini’s per plate, drizzle with olive oil and honey, season with salt, and serve with a glass of Geode Chardonnay.
